Spanish Lemonade

Ingredients :
  • 6 Lemons
  • 6 oz sugar
  • 1 litre dry red wine
  • 1 litre dry white wine
  • Some mint leaves

Method :

  1. (1) Place the sugar in a heavy-based saucepan & peel
the rind carefully from three of lemons using a
sharp serrated knife or a vegetable peeler. Do not
take any of the white pith off with the peel. Squeeze
the lemons for juice & strain them into the saucepan.
  2. (2) Place the saucepan over gentle heat to dissolve the
sugar and stirring occasionally. Set aside to cool
    completely.
  3. (3) Slice the remaining lemons about 1/4 inch thick. Mix
all the ingredients together & pour into a large glass
jug. Refrigerate for at least 4 hours or overnight &
    stirring occasionally.
  4. (4) Add just the leaves or small springs of mint to the
lemonade, stirring them in well. To serve, pour into
    tall glasses over ice.

Remark :

  1. (1) You can use 7 or 8 limes or 3 oranges in place of
    the lemons.
